Vegetable soba is one of the types of noodles that you can eat without ruining your diet because it is not high in calories and is a great side dish for family dinners and lunches. It's a change from having white or red sauce pasta.

- 2 cups pasta, any type
- 2 tablespoons olive oil
- 1 clove of minced garlic
- 1 zucchini, sliced
- ½ bell pepper, chopped
- ½ red bell pepper, chopped
- 1 sliced tomato
- Season with salt and black pepper
- ¼ cup chopped parsley

- Bring salt water to a boil, add a little oil and stir to prevent the pasta from sticking.
- Once the pasta is cooked, drain and set aside.
- Add olive oil to a frying pan, add garlic and fry until fragrant. Add the zucchini and stir for 2 minutes, then add the coloured peppers and stir until tender, then add the tomatoes and a pinch of salt and black pepper, stir the vegetables well, cover the pot and let soften for 2 minutes.
- Next, add the pasta and mix well until the taste is familiar, add the parsley and turn off the heat and mix well.
- Put the pasta with vegetables in the serving bowl and that's it.
