Modus Operandi Of Hammour Mandi


Ingredients

  • To prepare the rice:
  • 2 cups of long grain rice, washed and soaked
  • 3 cups of hot water
  • 2 tablespoons of butter
  • 1.5 teaspoon:
  • egg yolk powder gives a red colour - saffron yolk powder gives a yellow colour - cardamom - cloves.
  • 1 teaspoon:
  • salt - chicken broth powder - Mandi spices
  • 1 cinnamon stick
  • To prepare the grouper:

  • 1.25 kilograms of humour, sliced
  • 1 piece:
  • chopped onion - hot red pepper
  • ¼ cup:
  • lemon juice - vegetable oil
  • 4 cloves of garlic
  • 3 tablespoons of tomato sauce
  • ¾ tablespoon:
  • paprika - turmeric - salt
  • ½ teaspoon:
  • powdered ginger - ground cardamom - black pepper - ground cumin
  • To prepare the fried onions:
  • 4 onions, cut into thin slices
  • ⅓ cup vegetable oil, for frying

How to prepare

  1. Put the butter in a bowl over medium heat and add the cardamom, cloves, cloves, a nail and the Mandi spices and stir for a minute, then add the rice and stir for 3 minutes, then add 2.5 cups of hot water, chicken broth powder and salt to the rice and stir well, then close the lid and leave it on the fire for a while 8 minutes until the water absorbs and we make the fire quiet. 
  2. Mix the red color with a quarter of a cup of hot water, and the yellow color with another quarter of a cup, and pour each of them in the form of a longitudinal line on the rice until some grains of rice are colored yellow and red. By smoking the rice using natural coal and oil, and then mixing the colored rice grains with the white rice.
  3.  For the fish prep, place the onion, garlic, chilli, lemon juice, oil, tomato sauce, all the spices and salt in an electric blender and grind well, pour the prepared marinade over the fish slices, stir and cover with plastic wrap until the fish is marinated.
  4.  Leave in the refrigerator for 60 minutes to absorb, then bake half the fish with the marinade on a covered baking sheet at 180°C for 20 minutes until ripe.
  5. For sautéed onions, put oil in a pan over medium heat, add the onion slices and sauté until golden brown and medium golden, then drain for a few minutes on paper towels to remove excess oil. . Pour the rice into a serving bowl, sprinkle with fried onion slices, and spread out the grouper pieces for a healthy serving with a salad.
