How to prepare Iranian Ash Soup
- Put the chickpeas and white and red beans in a pot of 1.5 liters of water and heat for 60 minutes until soft, then wash the yellow and brown lentils and mix and put on top of the chickpeas and beans to let the mixture boil. for 35 minutes until everything is soft and the mixture is well combined and becomes heavy, then add green beans, spinach and leeks Celery and green coriander, then add salt, pepper, cumin and chicken stock cubes. Mix until the ingredients are combined, then add the vermicelli and leave the mixture for 10 minutes until the vermicelli is soft. Put vegetable oil in a frying pan over medium heat, add onions and leave it for 7 minutes until it turns brown, then add it to the soup and pour it on the plate.
